What you'll need

  • 280g self raising flour
  • 170g caster sugar
  • 85g soft unsalted butter
  • 1 rounded teaspoon of ground ginger
  • 1 tablespoon golden syrup
  • 1 teaspoon bicarbonate of soda
  • 3 tablespoons hot water
  • 50g crystallised ginger, finely chopped (optional)

What to do

  1. Pre-heat oven at 180C / fan 165C / gas mark 4
  2. Lightly butter a baking tray
  3. Sift the flour and ginger together into a mixing bowl
  4. Mix in the butter
  5. Add the sugar, syrup, crystallised ginger (if using) and bicarbonate of sofa that has been dissolved in the hot water
  6. Mix well and make into small balls (large marble size, this will make about 40 biscuits)
  7. Place on the baking tray and bake for 20 minutes
